
For my niece's first birthday party, Brian and I made vanilla cupcakes with pink buttercream frosting and marzipan daisies. Except for the buttercream getting a little too warm (soupy buttercream results), the cupcakes were super cute I thought.

Butter cream is essentially fat and sugar. The butter cream you get in the grocery store is probably vegan. They use shortening. So the only "fix" that I make is to use non-hydrogenated fat in mine.
Marzipan sometimes is not vegan. For some reason, sometimes there is egg in it. However, the brand that my local Safeway carries is vegan.
